A note from Chef: ⁠
⁠
”We love the quality of kingfish and wanted to showcase the different parts with different techniques…the loin is seasoned with lemon, sea salt and served with a citrus escabeche, while the belly is marinated with jicama “rice” and made into a roll with seaweed and fermented farro. Finally, the collars are cured, smoked and turned into a Florida-style fish dip.”⁠
